Balvenie Whiskey is one of the classic after-dinner malts, Balvenie Doublewood’s extra complexity and richness are a result of a second maturation in fresh sherry casks. Great stuff.
The Balvenie DoubleWood is a 12 year old single malt which gains its distinctive character from being matured in two wood types. http://brewerri.com/balvenie-whiskey/Over the period of maturation it is transferred from a traditional oak whisky cask to a first fill European oak sherry cask. Each stage lends different qualities to the resulting single malt ~ the traditional casks soften and add character, whilst the sherry wood brings depth and fullness of flavour.
Balvenie DoubleWood is, to not much surprise, aged in two kinds of oak casks! It was firstly matured in refill American oak casks before it was treated to a finish in first fill European oak Oloroso sherry butts for an additional nine months. The expression was launched in 1993, and has become a somewhat iconic bottling over the years. Even at 12 years old, this rich and complex dram is an excellent example of what the Balvenie distillery can craft.
To craft The Balvenie DoubleWood 12 year old single malt whisky Malt Master David C. Stewart MBE returned to one of his most celebrated achievements – consecutive maturation in two different types of cask, a process often referred to as ‘cask finishing’. This technique is at the heart of The Balvenie DoubleWood – it sees the whisky matured first in American oak barrels, which impart soft sweet vanilla notes, before being transferred to European oak sherry casks, where the second cask ageing adds rich spicy flavours and a depth and fullness of flavour.
TASTE Sweet with dried fruits, sherbet spice, toasted almonds and cinnamon, layered with a richness of creamy toffee notes and traces of oak and deep vanilla.
